  1. Dacquoise :Préchauffez votre four à 180°C. Montez les blancs en neige et les serrer avec le sucre en poudre. Ajoutez le sucre glace, la poudre d'amande, la farine et le mélange praliné. Coulez votre préparation dans le rectangle réglable et enfournez 20 min. Laissez complètement refroidir.
  2. Croustillant praliné :Au bain marie, faites fondre la tablette de pralinoise. Ajoutez le pralin en poudre et les crêpes dentelles émiettées. Déposez votre croustillant praliné sur la dacquoise est laissez durcir au frais une bonne heure.
  3. Mousse chocolat Dans un bol d'eau bien froide, faites ramollir la gélatine. Au bain marie, faites fondre le chocolat noir et 20 cl de crème liquide entière. Ajoutez la gélatine ramollie et essorée. Laissez tiédir à température ambiante. Montez le reste de crème liquide en chantilly ferme et ajoutez en plusieurs fois à la spatule le chocolat tiède. Laissez reposer la préparation au frais 3h.
  4. Déposez votre mousse dans le rectangle au dessus des deux autres préparations et lissez à l'aide d'un racloir dentelé. Laissez au frais ou congélateur toute une nuit.
