  1. Pour la pâte sucrée, crèmer le beurre avec le sucre glace, ajouter l'oeuf, mélanger et ensuite la farine. Ne pas trop travailler la pâte. Laisser-la reposer 1h au frigo avant de l'étaler et de l'emporte piècer en forme de coeur et cuire 14 min à 180°.
  2. Ganache montée à faire la veille.
  3. Tremper la gélatine dans un bol d'eau froide.faire chauffer le lait, la crème et le glucose. Faire fondre le chocolat. Dès que le mélange lait/crème arrive à ébullition, verser en 3 fois sur le chocolat et ajouter la gélatine. Bien mélanger et incorporer les 150g de crème liquide entière froide. Bien mélanger et filmer au contact une nuit entière avant de monter comme une chantilly.
  4. Chantilly stracciatella: monter la crème liquide entière, ajouter le sucre et râper les carreaux de chocolat au dessus.
  5. Montage: sur le premier coeur Pocher la ganache montée et la chantilly. Poser le 2ème coeur dessus,et répéter l'opération pochage. Reste plus qu'à décorer selon votre imagination😉
